caramel popcorn. [diy #5]

so once again i turned to another recipe and also once again got it from the Homemade Mama's website.  i went with a caramel corn recipe they had because it said better to do with two people and my boyfriend was in town so it worked out well.

ingredients:
  • about five quarts plain popcorn (i used a little less and just altered the recipe)
  • 1 cup butter
  • 2 cups brown sugar
  • 1/2 cup karo syrup
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda



to start out you of course need to have your popcorn popped.  i just popped mine in a pot with oil on the stove top and that worked fine.  you also need to preheat your oven to 250 degrees.
then, in a large saucepan you need to melt the butter, then add in your brown sugar, karo syrup and salt and stir constantly until it boils.  let it boil for four minutes and then add in the vanilla and baking soda.  then pour with a thin stream over the popcorn while someone else mixes and stirs it so it's more even.

then you want to put your caramel corn into baking pans and bake them in the oven for 45 minutes stirring every fifteen.
i loved this recipe and would definitely recommend it.
